Welcome to Tasty Tuesday at Things To Do In New Jersey!

One of the things that makes this time of the year in New Jersey unique is the enormous cranberry harvest that takes place in the Pine Barrens each fall. Garden State farms rank 3rd in the United States for cranberry production, no small feat considering our small size (and the even smaller area within the state that is suitable for growing cranberries). Each year, New Jersey farmers harvest over 27,000 TONS of cranberries! Ninety-five percent of those cranberries are sold to Ocean Spray Cranberries, which is a grower-owned cooperative whose New Jersey facilities employ nearly 300 people. Many of these cranberries then make it to our local markets in the form of juices, dried cranberries, and fresh cranberries.

I picked up a bunch of those wonderful fresh New Jersey cranberries this week (did you know that they freeze really well?) and decided to make a yummy treat with them for my family. Since I also had a bunch of Jersey Fresh apples in my kitchen, I settled on this scrumptious Apple Cranberry Bread.

This bread is great for a Sunday or holiday brunch, a dessert, or just an anytime snack. Everyone to whom I have ever served it has raved about it, and it is super quick and easy to mix up. 1-1/4 cup fresh cranberries
¾ cup sugar
1/3 cup vegetable oil
1 egg, beaten
1-1/2 cup flour
1-1/2 tsp. baking powder
½ tsp. baking soda
1-1/2 tsp. cinnamon

Preheat your oven to 350° F and grease a loaf pan.

Combine the apples, cranberries, sugar, and oil together in a mixing bowl. Add the beaten egg.

Mix together the dry ingredients in a separate bowl, then gently fold into the apple/cranberry mixture until well combined. The batter will be very thick – this is normal.

Spoon the batter into the greased loaf pan, smoothing out the top and making sure there are no big “air pocket” in the batter.

Bake for one hour or until a toothpick inserted in the center of the loaf comes out clean.

Note: If you like nuts, you can add ½ cup of walnuts to the apple/cranberry mixture prior to adding the dry ingredients. My family has mixed opinions on nuts, so I opted to leave them out this time.
